Shojin Ryori / Buddhist Cuisine Cooking Class

This cooking class starts with an introduction of Buddhist cuisine.

The class includes many tips for Japanese cooking.
You can learn how to make Japanese soup stock, cook Japanese rice with a pot and make typical Buddhist cuisine dishes.

I am happy to arrange dishes If you have a specific request for your food and will teach you how to substitute with other ingredients.
However, please note that there is a possibility of contamination and please refrain from taking the class if you have a severe allergy or you are strict believers.

<Cooking Class Menu>

This cooking class is vegan and gluten-free!

1. Main dish made by tofu, vegetables etc.
 ex.
 Shiitake mushroom like abalone
 Tofu grilled between lotus root slices
 Tofu like Unagi etc.

2. Sesame tofu

3. Seasonal vegetable dish
 ex. Green leafy vegetable and grilled mushroom

4. Shira-ae
 Mashed tofu and seasonal vegetable salad

5. Pickled seasonal vegetable

6. Seasonal vegetable soup
 ex. Kenchin-jiru
 Japanese tofu and vegetable chowder

7. Rice
 We start from milling rice and you have a choice of white, half milled etc.
 You can learn how to make delicious rice with a pot, not a rice cooker.

8. Japanese tea

I use natural seasonings made with traditional methods for my cooking.
